  • 8 oz rotini or penne pasta
  • 6 strips crispy bacon
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a skillet over medium heat, cook bacon until crispy (6-8 minutes). Drain on paper towels and chop.
  3. In a bowl, whisk together mayonnaise, Greek yogurt, mustard, salt, and pepper until smooth.
  4. In a large bowl, combine cooled pasta, bacon bits, halved tomatoes, and chopped lettuce. Pour dressing over the salad and toss gently.
  5. Cover and refrigerate for at least 30 minutes before serving.
