- 1/4 cup extra virgin olive oil

Instructions
- Cook orzo pasta in salted boiling water according to package instructions (8-10 minutes). Drain and let cool.
- While pasta cooks, prepare vegetables: chop cherry tomatoes, dice cucumber, and finely slice red onion.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard; season with salt and pepper.
- In a large mixing bowl, combine cooled orzo with prepared veggies. Gently fold in feta cheese and herbs.
- Drizzle dressing over salad; toss gently and chill for at least 30 minutes before serving.
