  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook orzo pasta in salted boiling water according to package instructions (8-10 minutes). Drain and let cool.
  2. While pasta cooks, prepare vegetables: chop cherry tomatoes, dice cucumber, and finely slice red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard; season with salt and pepper.
  4. In a large mixing bowl, combine cooled orzo with prepared veggies. Gently fold in feta cheese and herbs.
  5. Drizzle dressing over salad; toss gently and chill for at least 30 minutes before serving.
